My food philosophy can be distilled to one word: Enjoyment.  You should find joy in the way you prepare food, the reason you cook, and the ingredients you use.  You ought to care about what you are cooking, from the food to the people to the techniques.  While there might not be only one right way to do something, there is definitely a wrong way. 


So:

  • Be proud of your roots and protect your heritage and culture.  Share it with others.

  • Respect ingredients and the people who produce them.  Use ingredients in a way that ensures they will be around in 10, 30, and 50 years from now. 

  • Buy the best ingredients that you can afford.

  • You can never be too organized; a clean work space allows for a clean mind that can produce a clean plate of flavors.

  • Be curious! Ask yourself questions.  Never stop researching and seeking knowledge in the kitchen.

  • Cooking should make you happy.
